Located in the heart of Nice’s old town, near the famous Saleya Market (flowers and produce), The Papayou restaurant is now offering cooking workshops in Niçois, Moroccan and Thai. Your instructor, Hélène, will teach you all of her secrets enabling you to prepare delicious recipes that will then be easy for you to replicate at home. For each workshop, we supply all the materials, an apron and a printed card with the recipes of the day. Reserve your place in advance because the Workshop is limited to 5 participants per session!

Niçois cuisine Workshop
Come and discover the food that has made Nice famous! The Niçois cuisine, made from local and traditional products from the sea, the coastal country or the mountains, is a subtle combination of common sense and the science of just the right dosage for balance and taste. It is a generous cuisine, combining simplicity and refinement, and is a promise of unusual tastes and aromas for the person who prepares it as well as for those who get to taste. The Niçois cuisine courses will be taught by Hélène, a recognized authority, and she will be pleased to share her experience with you, her tricks and other little secrets. Other specialists will participate in this workshop from time to time. Each course will begin with a visit to the Saleya Market, right next to the well-known Promenade des Anglais, to find the fruits and vegetables that will be used for recipes such as pissaladière (onion pizza), ratatouille, pistou (basil) vegetable soup, pan bagnat (vegetable and tuna fish sandwich), stuffed vegetables, beef and cèpe (wild mushroom) stew, etc. In order to fully appreciate the local cuisine and culture, you have to stroll leisurely through the Old Town, let yourself go from one narrow street to the next and actually breathe in all the aromas at the market where local producers spread out their fresh produce. Thanks to Hélène, you will find the best addresses in Nice. It is the home of olives, basil, fennel, red garlic, rosemary, thyme, marjoram and oregano, all of which add warmth and the special flavour to the local specialties. Thai cuisine Workshop
Thailand, that exotic destination, is not right next door. Hélène, however, has gone there for advanced culinary training. She came back with her diploma and will help you discover the tastes and aromas without making the long trip! With her help, you will very quickly master the basic elements of this simple cuisine and the striking results and unique aromas will impress your family and friends. On the menu we find some of the following: Thai vegetarian egg rolls, papaya and shrimp salad, sautéed rice with chicken and shrimp, green chicken curry, sautéed Thai noodles or perhaps the famous chicken in coconut milk. Thai cuisine is fascinating. Incredibly simple, it is a fantastic combination of colours, aromas and textures. The workshop will teach you to incorporate it into your usual cooking habits for delectable, easy and quickly prepared recipes for all occasions, be it an elegant or family dinner. The Workshop will help you discover new flavours such as red pepper, coconut milk, palm sugar, nuoc-mâm, combava leaves or lemon grass in recipes with delicate aromas. Moroccan cuisine Workshop
Why would we offer an entire workshop devoted to Moroccan cuisine? Because Hélène, who was born in North Africa, is especially attached to this cuisine that brings people together and plays such an important social role. Hélène suggests working on the preparation of a festive meal, with dishes such as tagines, lemon chicken, pastilla, chorba, briks with cilantro. . . Moroccan cuisine is an art based on the use of fresh fruit and vegetables along with bewitching spices giving it all its richness and specificity. Contrary to certain preconceived notions, Moroccan cuisine is neither fatty nor too spicy. On the contrary, it is both healthy and gastronomic. Hélène will teach you to use her spices and condiments. Moroccan cooking will no longer be a mystery for you! Welcome to Morocco!
The courses will be held at Papayou restaurant, which will be open for you every day and they will be conducted in French or English for around 2h30 .
